A good one is Smoked salmon rossettes.

You take a whole cucumber and slice it in half length ways. With a potato peeler you peel long ribbons of cucumber. Lay a piece of cucumber down place a long strip of smoked salmon on it (it should be the same size as the cucumber. Spread some cream cheese or smooth cottage cheese over the smoked salmon (you can mix the cream cheese or cottage cheese with some black pepper or any spices you like) then roll it up into a roll and garnish it with a small sprig of dill. This is a huge hit and its cheap and easy too make.
