I haven't had fried chicken in awhile! So good though. When we were kids my mom made a beer battered fried chicken. It was fantastic! I'll have to get that recipe from her.

I don't batter so much as flour, 'course I don't fry so much as pan-fry.

Always add ginger, onion & garlic powders, cumin and black pepper to the seasoned flour coating.

Sometimes add paprika, smoked paprika, red pepper, Old Bay, allspice, sage, powdered rosemary.

I love Thomas Keller's fried chicken! I believe it is the overnight herb brining that really makes this recipe stand out.

Here is one of my recipes:

Ingredients:

Chicken Fried Rice

     1 small onion, chopped, 1-1/2 Tbsp. finely chopped red peppers., 1-1/2 Tbsp. soya suauce or to taste, 1/2 cup chopped chicken, 2 Tbsp. finely chopped green peppers, 3 cups cooked rice, 3 Tbsp. oil, Oregano, Pepper, Salt, Summer savory, Thyme

How to make:
Saut onions and pepper in oil. Add rice, chicken and spices and soya sauce. Fry until hot and well blended.
