Leftover salad

What would you do?  What have you done?

I made a salad that surprised me from the remains of a buffalo steak dinner.

Leftover meat rice and vegetables.

I mixed a small amount of mixed vegetables (of particualr import & success were green bean segments peas and carrots for color and texture) with about a cup of cooked wild & brown rice.  I used maybe two TBS of vegetables.

Oh yeah, dress the vegetables with Italian dressing before mixing into rice.

I sliced the steaks like London broil, then scattered those strips atop mounded rice.  I microwaved enough to heat rice and take refrigerator chill off the meat - I don't remember, a minute, maybe two - not enough to continue cooking meat.

Garnish - well, this was for flavor as well as appearance - with halved and sliced scallion.

I'm here to say it was OK.

wow,

That was so amazing.

I may not be a vegetable lover but I can appreciate mixed veggies especially with rice.
