Chipotle Pineapple Pork Chops

4 4 oz pork chops
1 can pineapple chunks
s/p
chipotle powder
dash of vinegar

Season your pork chops with s/p and sear off in canola oil.  Remove chops a little more rare than you accustom.  Add in the can of pineapple chunks with the syrup.  Add s/p and some chipotle powder or pureed chipotles in adobo.  Reduce to a sauce consistency and add your chops back in and simmer for about 5 more minutes, or until desired doneness. Serve with bitter greens and you can use the same sauce as a vinaigrette.
